Being
a working woman, I have a great challenge for keeping up the festive spirit. I get
very little time for making these special things.
This
almond barfi is easy to make, and kids will love every bit of it.
Usually
the Almond barfi is made by blanching the almond. But I skipped this step, as I
am very lazy for blanching and all, and having no time is another factor.
Ingredients
:

Whole
Almonds– ¾ cup or Almond powder 1 cup.

Sugar
– ¾ cup
·
Water
– ¼ cup
·
Ghee
– 1.5 tsp
·
Cardamom
Powder – ¼ tsp
Method:
Dry
roast almonds, till a nice aroma comes (4-5 mins)
Make it to coarse powder with a dry mixture. Make sure the Mixie is very dry while grinding it. ¾ cup of whole almonds will give 1 cup of powder nearly.

Grease
a plate with little ghee and keep it aside.
Add
the Sugar, water, Cardamom powder in a Kadai. (Non-stick pan is preferable).
Keep stirring till the sugar syrup bubbles up as shown below.
Add the badam powder to the sugar syrup, now switch off the stove and mix it well without forming lumps.
Now
keep the flame in low and keep stirring scraping the sides. Add 1 tsp ghee in between.
Stir until the mixture leaves the sides of the pan and comes like a mass shown below. (Takes around 10 minutes for this quantity)
Keep stirring till the sugar syrup bubbles up as shown below.
Add the badam powder to the sugar syrup, now switch off the stove and mix it well without forming lumps.

Now
pour the mixture into the greased plate and run through a greased knife to get
the desired shape. Do not take of the pieces now. Wait till it sets well and cools
completely.
